    Sunday Meat Sauce

    As the weather gets cold I love homestyle comfort foods and one dish meals

    here is a recipe for a slow braised pork ragu, but you can substitute beef stew meat from the chuck or short ribs would be great as well

    Chef, I use vodka instead of water. Do you find 1 hour enough to break down the meat? I usually end up cooking the meat 2 to 3 hours depending on the cut. I also combine the cream with milk and put in a little at a time. I leave out the wine.
    There are very few foods more comforting than a ragu or bolognese sause.

    if using the pork shoulder and cut in small chunks 1 hour should be sufficient

    longer and it will reallly shred like pulled pork

    the addition of vodka sounds excellent

    the wine is to xounter balance the acid in the tomatoes, but its is optional

    chef1a, I would cook the pork longer as johnath suggested. I like the shredded feel and I think it is easier to eat. I use san marzano tomatoes and do not use wine. I like the fresh taste of the tomato and do not find them acidic.
