    Bg, I think egg beaters are just egg whites. Mark Brittman says one can use egg beaters instead of eggs - 1/4 cup egg beater per egg. I have never tried it, but was planning to, now that I have found an easy way to make mayo.

    Kar is right. You are using raw eggs, so it will not last as long as the store bought. But you are only making a small amount, and if you are diligent in keeping it refrigerated - you will have no problems. I have been doing this for years, and I and I and my family is still alive. Go for it!
