Makes 4 sandwiches
| 8 | thick slices challah or other eggy bread |
| 1/2 | cup mascarpone, at room temperature |
| 3/4 | cup high-quality fruit preserves |
| 2 | tablespoons unsalted butter, softened |
| Confectioner's sugar (for sprinkling) |
2. Brush the outside of each sandwich with butter. Grill them in the press or in the hot skillet for about 1 minute a side or until golden.
3. Transfer the panini to a cutting board. Dust generously with confectioner's sugar. Quarter each sandwich and serve at once.
