Makes 4 sandwiches

8 thick slices challah or other eggy bread
1/2 cup mascarpone, at room temperature
3/4 cup high-quality fruit preserves
2 tablespoons unsalted butter, softened
Confectioner's sugar (for sprinkling)
1. Heat a panini press or a heavy skillet over low heat. Set the bread on a work surface. Spread 4 slices with mascarpone. Spread 4 slices with preserves. Close the sandwiches.

2. Brush the outside of each sandwich with butter. Grill them in the press or in the hot skillet for about 1 minute a side or until golden.

3. Transfer the panini to a cutting board. Dust generously with confectioner's sugar. Quarter each sandwich and serve at once.
