Makes 4 sandwiches
|8||thick slices challah or other eggy bread|
|1/2||cup mascarpone, at room temperature|
|3/4||cup high-quality fruit preserves|
|2||tablespoons unsalted butter, softened|
|Confectioner's sugar (for sprinkling)|
2. Brush the outside of each sandwich with butter. Grill them in the press or in the hot skillet for about 1 minute a side or until golden.
3. Transfer the panini to a cutting board. Dust generously with confectioner's sugar. Quarter each sandwich and serve at once.
