1991 World Championship chili recipe

Won by Randy Robinson, an attorney from Columbus, Ohio.

Phase 1:

3 pounds beef, cubed

1 tablespoon flour

1/2 pound ground pork

1 tablespoon vegetable oil

1/3 cup chopped onions

1/2 tablespoon granulated garlic

1 can (10 3/4-ounce) beef stock

2 cans (14-ounce) chicken stock

1 (8-ounce) can tomato sauce

1 1/2 teaspoons cumin

1 (4-ounce) can mild green chilies

1 jalapeno pepper, seeded and chopped

1 teaspoon freshly ground black papper

3 tablespoons chili powder such as Gebhardt

Phase 2:

1/2 cup tomato sauce

4 tablespoons chili powder (Gebhardt)

2 tablespoons mild New Mexico chili powder

2 tablespoons cumin

1 teaspoon granulated garlic

1 teaspoon Tabasco

1 1/2 teaspoons brown sugar

Phase 1: Sprinkle beef with flour, then saute along with ground pork in the cooking oil. Drain and place in 4-quart cooking pot. Add all other ingredients and simmer, covered, for 1 1/2 hours.

Phase 2: Uncover pot and add all ingredients in Phase 2 and simmer 45 minutes. Serves six to eight.
