Cheese and broccoli strata
1/2 pound day-old bread slices
20 ounces frozen cut broccoli
1/2 pound shredded Cheddar cheese
8 eggs
1 1/4 cups milk
Pinch salt
1/4 teaspoon prepared mustard
Tabasco sauce to taste
Sprinkle of paprika
Cut bread into 1 1/2-inch cubes. Cook broccoli only until just tender;
drain. In an 8- or 9-inch baking pan, layer half the bread cubes, followed by
the broccoli, cheese and remaining bread cubes. Beat eggs with milk, salt,
mustard and Tabasco sauce. Pour into baking dish and smooth down evenly.
Sprinkle with paprika. Set baking dish in a pan containing hot water. Bake
uncovered at 350 degrees until custard sets, 1 hour or more. Cut into four
pieces and serve. Serves four.
