1/2 cup finely diced onion 1/2 cup finely diced celery 1/4 cup finely diced green bell pepper 1 (10-ounce) package frozen corn, defrosted and drained 1 teaspoon poultry seasoning 1/4 teaspoon ground nutmeg Salt and pepper, to taste 1 1/4 pounds ground turkey 1 egg, lightly beaten 1/2 cup fresh bread crumbs 1 tablespoon dark brown sugar 3 tablespoons ketchup 1 teaspoon spicy mustard
Applesauce (optional) In a large bowl, combine turkey, egg, bread crumbs and vegetable mixture. Mix together until evenly blended. Transfer mixture to broiler pan rack and shape into an oval loaf about 9 inches long. Stir together brown sugar, ketchup and mustard and spread over loaf. Bake for 1 hour; increase oven temperature to 350 degrees and bake 20 minutes longer or until a meat thermometer inserted in the middle registers 165 degrees. Let stand 10 minutes before slicing. Serve with applesauce, if desired. Serves 6. |
