Baked salmon with fruit salsa

From ``Zone Perfect Meals in Minutes,'' by Barry Sears (HarperCollins)

Block Size: Ingredients:

4 Protein 6 ounces salmon steak

1 Carbohydrate 3/4 cup blackberries

1 Carbohydrate 1/2 cup salsa*

1 Carbohydrate 1 kiwi fruit, peeled and diced

1 Carbohydrate 1/2 Granny Smith apple, diced

4 Fat 1 1/3 teaspoons olive oil

Spices: 2 teaspoons soy sauce

1 teaspoon ginger root, chopped

1/2 teaspoon dill

Dash hot pepper sauce


Brush baking dish with oil; place salmon steak in baking dish. Sprinkle with soy sauce, ginger root, dill, and hot pepper sauce. Cover and bake in a preheated 350-degree oven for 30 to 35 minutes. In a medium bowl combine salsa and fruit. Place fish on one side of a serving plate and salsa beside it.

*Note: Use whatever strength salsa you prefer.

Servings: 1 dinner entree (4 blocks).
