Misty Kalkofen’s suggestions for simple and refreshing cocktails:

The RC Cooler

1.5 oz Del Maguey Mezcal Vida .5 oz Velvet Falernum .5 oz fresh lime juice Two dashes Fee Brothers Whiskey Barrel Bitters Soda Combine the Vida, Velvet Falernum, and lime juice in a shaker tin with two ice cubes. Shake gently. Strain into a tall glass over ice. Garnish with a sprig of cilantro.

Rosa de Forteleza

1.25 oz Cachaça .5 oz Aperol .75 oz Cocchi Americano .5 oz fresh white grapefuit juice Combine all ingredients in a shaker with ice. Shake and strain into a chilled cocktail glass.

Two Orchard Thieves

1.5 oz Laird’s 7 1/2 Year Apple Brandy .75 oz Bols Genever .5 oz Luxardo Maraschino .25 oz Cynar

Stir all ingredients with ice in a chilled mixing glass. Strain into a chilled cocktail glass. Garnish with grated cardamom.

Zocalo

2 oz Vida .5 oz Dolin Vermouth de Chambéry .5 oz Canela simple syrup Two dashes Angostura orange bitters Stir all ingredients in a chilled mixing glass. Strain into a chilled cocktail glass. Garnish with the oil from a lemon twist. Discard the twist.

To make the canela simple syrup: Break up two sticks of canela into one cup of water in a saucepan. Bring to a simmer for one minute. Remove from heat and stir in one cup of sugar. Allow to cool. Strain.

Sel de la Mer

1.25 oz Pierre Ferrand Ambre Cognac 1.5 oz La Gitana Manzanilla Sherry .25 oz Green Chartreuse .25 oz Luxardo Maraschino Two dashes Bitter Truth Original Celery Bitters

Pour ingredients over ice in a double old fashioned glass (preferably one large, hand hewn cube if available). Stir briefly. Garnish with a pinch of salt.
