Serves 4 with leftovers

1 cup mayonnaise
Juice of 1½ lemons
teaspoons smoked Spanish paprika, or more to taste
1 bunch scallions, finely chopped
Salt and pepper, to taste

1. In a bowl whisk together the mayonnaise, lemon juice, smoked paprika, scallions, salt, and pepper. Taste for seasoning and add more salt, pepper, or paprika, if you like.

2. Set aside ¼ cup of the mayonnaise for the hash. Serve the remaining with the stuffed potatoes. Sydney Oland
