Makes two 9-inch pies
| 9 | small cooking apples (Cortland, Baldwin, Jonagold, Rome), unpeeled and cut into 1-inch pieces |
| 1 | cup heavy cream |
| 12 | ounces (1 1/2 cups) applesauce |
| 3/4 | teaspoon ground nutmeg |
| 1 | teaspoon ground ginger |
| 1 | teaspoon ground cinnamon |
| 2 | prebaked 9-inch pie crusts |
| 12 | slices cheddar or Colby cheese or 2 cups granola (for topping) |
1. Set the oven at 375 degrees.
2. In a large bowl, combine the apples, cream, applesauce, nutmeg, ginger, and cinnamon. Stir well. Divide the mixture between the pie crusts.
3. If using cheese, lay it on top of the filling, in a design if you like. If using granola, sprinkle it over the filling.
4. Bake the pies for 35 to 40 minutes or until the apple pieces are tender. Adapted from Jesse and Julien Gordon![]()
