Magic meatballs

Makes about 42 small meatballs

6 to 8 tablespoons green puree (see recipe)

2 tablespoons tomato paste

1 teaspoon salt

1/4 cup unsweetened wheat germ

1 egg, beaten

1 pound lean ground beef or turkey

2 tablespoons olive oil

1. In a bowl with the back of a spoon, mix the green puree and tomato paste until the green color turns brownish. Mix in salt, wheat germ, and egg. Add the ground meat and mix with your hands until well combined.

2. Using damp hands, pinch off about 2 teaspoons of meat and gently shape the mixture into mini meatballs.

3. Set the oven at 350 degrees. Brush a large rimmed baking sheet with the olive oil. Place the meatballs on the sheet, and bake for 10 minutes. Using a spatula, turn the meatballs over to brown the other side.

4. Return to oven for 10 minutes more. Serve with toothpicks, add to soup or use with sauce and spaghetti. - Adapted from "Sneaky Chef"
