Aromatic couscous

Serves 4

2 cups chicken stock or water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1 cup couscous
1/3 cup golden raisins
1 scallion, thinly sliced
1. In a saucepan, combine the stock or water, cinnamon, and cumin. Bring to a boil. Add the couscous, raisins, and scallion. Stir well.

2. Remove from the heat, cover the pan, and set aside for 5 to 7 minutes or until the couscous is tender when tasted. Fluff with a fork. Christine Merlo
