We pestered Jackson Cannon for three refreshing seasonal cocktails, and he complied. Bottoms up.

Joie De Peche
Half a fresh peach
2 oz. Lillet Blanc
1/2 oz. lemon juice
Muddle peach in a mixing glass, add other ingredients, and shake over ice. Strain into a champagne saucer and top with 2 oz. Cava. Garnish with a dehydrated peach chip.

Blueberry Thrill
2 oz. blueberry-infused gin (Cannon uses Gale Force from Nantucket)
3/4 oz. cardamom spiced simple syrup
1/2 oz. fresh squeezed lemon juice
Shake over ice and strain into a chilled cocktail glass.

Belle de Jour
1/2 oz. cognac
1/2 oz. Benedictine
1/2 oz. house-made pomegranate grenadine
1/2 oz. fresh lemon juice
Shake lightly over ice and strain into a champagne flute. Top with 3 oz. champagne. Garnish with a twist of lemon
