Garlic-smashed potatoes
Serves 4
| 1 3/4 | pounds small red potatoes, cut in half (or large red potatoes cut into 1-inch pieces) |
| 4 | cloves garlic, smashed with the side of a knife |
| 1 | teaspoon kosher salt, and more to taste |
| 1/2 | cup creme fraiche or sour cream |
| 1/2 | cup freshly grated Parmesan |
| 2 | tablespoons unsalted butter, cut up |
| 1/2 | teaspoon pepper, and more to taste |
2. Drain the potatoes into a colander. Return them to the saucepan. Add the creme fraiche or sour cream, Parmesan, butter, and pepper.
3. Using a potato masher or whisk, mash the potatoes. Taste for seasoning and add more salt and pepper, if you like. Tony Rosenfeld![]()
