Makes 1 1/2 cups

If you like, add 1/4 cup chopped fresh dill, 2 tablespoons drained capers, or 1/4 cup chopped fresh parsley.

1 package (8 ounces) cream cheese, at room temperature
3 scallions, trimmed and coarsely chopped
4 slices lox, coarsely chopped
Salt and pepper, to taste
1. In a food processor, work the cream cheese until it is smooth. Turn off the motor and scrape down the sides of the work bowl several times.

2. Add the scallions, lox, salt, and pepper. Continue working the cream cheese mixture until it is blended. It's OK if there are chunks of salmon in the mixture. Spread on bagels.
