Halibut Olympia

Serves 4

1/2 cup mayonnaise
1/2 cup sour cream
Juice of 1 lemon
Salt and pepper, to taste
1 onion, chopped
2 pounds skinless boneless halibut, cut into 4 pieces
2/3 cup crushed croutons
3 tablespoons chopped parsley (for sprinkling)
1. Set the oven at 375 degrees. Have on hand a 9-by-13-inch baking dish

2. In a small bowl, mix the mayonnaise, sour cream, lemon juice, salt, and pepper.

3. Place the onions in the baking dish. Set the fish on top, making one layer. Spread the mayonnaise mixture on the fish and sprinkle with crouton crumbs.

4. Bake the fish for 25 minutes or until it is cooked through. Sprinkle with parsley. Adapted from the Windbreak Cafe
