Goat cheese with olives

Serves 6

1/2 cup mixed pitted green and black olives, coarsely chopped
1 round or log (4 to 6 ounces) fresh creamy goat cheese, at room temperature
Salt and pepper, to taste
1. In a bowl combine the olives, goat cheese, salt, and pepper. With the back of a spoon, mash the olives into the cheese until thoroughly incorporated. Add more salt and pepper, if you like.

2. Pack the spread into a small bowl, smooth the top, and cover with plastic wrap. Sheryl Julian
