The old adage about the way to your loved one's heart being through the stomach is invoked often - and many will tell you it's true. A home-cooked dinner is as nice as any fluffy teddy bear or bouquet of flowers or sparkling diamond ring. OK, check that on the bling. But you get the picture. Make a special Valentine's meal and you'll score big points.
Choose one of these two main courses for your night by candlelight. Beef stars in a dressy and quick take on boeuf Bourguignon, the classic French braise of beef, red wine, and mushrooms. Sub tender but pricy tenderloin for traditional stew meat and turn the dish into a speedy classic. The lighter option is a thick fillet of cod braised in a Spanish broth. Sear the fish first in a nonstick skillet, then braise it in tomatoes, saffron, and sherry vinegar. You can add diced chorizo or boiled potatoes for a little more substance.
Both dishes meet the basic Valentine's requirements. Each yields two servings, though you can easily double the amounts if you're cooking for more. The ingredients are low in garlic and onion so the meal won't mess up the evening's mojo. Finally, these dishes easily mix and match with all sorts of sides, starters, and sweets. Begin with a green salad and then pair the main courses with mashed potatoes or a crusty baguette. To finish, chocolate, in almost any form, should do the trick.
