Green salsa

Makes 1 1/2 cups or enough to serve 6

1 pound tomatillos
3 jalapenos or other chili peppers, seeded and coarsely chopped
2 cloves garlic, chopped
2 teaspoons salt, or to taste
1. Remove the husks from the tomatillos and scrub them. Cut tomatillos into quarters.

2. In a saucepan, combine the tomatillos, jalapenos, garlic, and salt. Bring to a boil, and simmer for 20 minutes or until the tomatillos are tender. Let the mixture cool.

3. In a food processor, work the mixture until it is a coarse puree. Taste the salsa for seasoning and add more salt, if you like. Adapted from Angela's Cafe
