Serves 4
On a nice night, you can grill these turkey burgers, which are laced with diced apple, scallions, hot sauce, sweet chili sauce, and cilantro. Or broil them close to the element. Set them in a roll, add lettuce, tomato, and onion, if you like, and top with curried mayo.
BURGERS
| 1 | tablespoon olive oil |
| 1 | cooking apple (Cortland, Jonagold, Baldwin), peeled and diced |
| 3 | scallions, thinly sliced |
| 1 1/2 | pounds ground dark meat turkey |
| 1 | tablespoon sweet chili sauce |
| 1/2 | teaspoon hot sauce |
| 2 | tablespoons chopped cilantro |
| 1 | teaspoon salt |
| 1/2 | teaspoon pepper |
| Vegetable oil (for brushing) |
2. Transfer the mixture to a large bowl; set aside to cool.
3. Light a charcoal fire or turn on the broiler.
4. Add the turkey, chili sauce, hot sauce, cilantro, salt, and pepper to the apple mixture. Mix well with your hands. Shape into 4 large patties.
5. Brush the patties with oil. Grill or broil them for 7 minutes on a side or until cooked through.
MAYONNAISE
| 1 | tablespoon olive oil |
| 1 | tablespoon curry powder |
| 1/4 | cup mayonnaise |
| 1 | tablespoon lime juice |
| Salt and pepper, to taste |
2. In a bowl, stir the mayonnaise, lime juice, salt, and pepper until it is smooth. Add curry oil to the mayo mixture. Taste for seasoning and add more salt and pepper, if you like. Catherine Smart ![]()
