> Even when your work surface is well floured, rolled dough sometimes sticks -- especially on a wooden board. A bench scraper, essentially a broad, blunt metal blade with a handle, is perfect for loosening dough from the surface without ripping it or messing up the shape. Look for scrapers that are about 6 inches long and that have a thin edge to slip under the dough smoothly. (Scooping up chopped vegetables is another great bench-scraper use.) The blades on some models, such as one from OXO, even have engraved ruler marks for handy measuring of dough. -- A.R.
