Balsamic vinaigrette

Makes 3/4 cup

2 tablespoons balsamic vinegar
1/4 teaspoon maple syrup
2 tablespoons water
2 teaspoons Dijon mustard
Salt and pepper, to taste
1/2 shallot, finely chopped
1 small clove garlic, finely chopped
Few sprigs fresh thyme and rosemary, leaves finely chopped
1/2 cup olive oil
1. In a bowl, whisk together the balsamic, maple syrup, water, mustard, salt, pepper, shallot, garlic, thyme, and rosemary.

2. Whisk in the oil a little at a time until the dressing emulsifies. Taste for seasoning and add more salt and pepper, if you like. Adapted from “A Way of Living’’
