In Italian “gustare’’ means “to taste,’’ and that’s just what you’re encouraged to do at Gustare Oils & Vinegars, which opened last month in Mashpee Commons. Wire shelves in the light-filled shop are lined with miniature “fusti,’’ the stainless steel vessels used to store fresh-pressed oil at an olive mill, each with a spigot. Choose from 20 extra virgin olive oils from Italy, Spain, and Australia, and 20 Italian balsamic vinegars, aged a minimum of 12 years, all from Modena. Dave and Catherine Ferraresi, Rhode Island natives who lived in Europe for 10 years, have another shop in Chatham. You can buy the oils and vinegars straight up or infused with intriguing flavors such as Persian lime, tarragon, grapefruit, honey-ginger, and fig. If you’ve never had balsamic vinegar with dessert, taste the dark chocolate.
