Serves 6

1/2 cup seasoned rice vinegar
1/2 cup natural rice vinegar
2 shallots, finely chopped
1/2 bunch cilantro, finely chopped
1 jalapeno or other hot chili pepper, seeded and chopped
Juice of 1 lime

1. In a bowl, whisk together the seasoned and natural rice vinegar, shallots, cilantro, chili pepper, and lime juice.

2. Serve with raw or grilled oysters.
