|Butter (for the pan)|
|1 1/2||cups flour|
|1 1/4||cups sugar|
|1 1/2||teaspoons ground cinnamon|
|1 1/2||teaspoons ground nutmeg|
|3||large batata potatoes, peeled and grated|
|1||can (14 ounces) unsweetened coconut milk|
|2||teaspoons vanilla extract|
|1/4||cup ( 1/2 stick) butter, melted|
2. In a bowl, combine the flour, sugar, cinnamon, and nutmeg. With a spoon, mix well.
3. Stir in the potatoes, coconut milk, vanilla, and butter. Mix well. Transfer to the baking dish.
4. Bake for 1 hour or until set. Transfer to a wire rack to cool. Adapted from Coonamessett Farm
