|1||clove garlic, chopped|
|6||tomatoes, peeled and chopped|
|4||cups chicken stock|
|Salt and pepper, to taste|
|Handful fresh basil leaves|
1. In a soup pot, heat the oil over medium heat. Cook the onion, stirring often, for 10 minutes. Add the garlic and cook 1 minute more.
2. Add the tomatoes, stock, salt, pepper, and basil. Bring to a boil and simmer 15 minutes.
3. In a blender, puree the soup in batches. Reheat until hot.
