Sunday Supper & More
Serves 4
| 1 | tablespoon olive oil |
| 1 | small onion, finely chopped |
| 1 | red bell pepper, cored, seeded, and finely chopped |
| 1 | cup water |
| Salt and black pepper, to taste | |
| 2/3 | cup couscous |
1. In a saucepan over medium-high heat, heat the olive oil. Add the onion and bell pepper. Cook, stirring often, for 5 minutes or until vegetables are tender.
2. Add water, salt, and pepper. Bring to a boil, and remove the pan from the heat. Stir in the couscous and cover with a lid. Let the mixture sit for 10 minutes.
3. Fluff with a fork.
