Makes 2 cups

2 cups whole raw almonds
2 teaspoons light brown sugar
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper, or more to taste
1 tablespoon olive oil

1. Set the oven at 350 degrees. Spread the almonds on a rimmed baking sheet. Bake for 10 minutes or until lightly toasted and aromatic.

2. In a bowl, combine the sugar, thyme, oregano, salt, cayenne, and oil. Add the warm almonds and toss well. Serve at room temperature.
