Creamy avocado dip

Serves 6

At evening meetings, potlucks, and parties, this healthy dip can accompany fresh veggies instead of chips. Greek-style yogurt has a thick texture, but you can use traditional yogurt too. Or thin the dip with skim milk to use as a salad dressing.

1 ripe avocado
1 cup plain Greek-style yogurt
Juice of 1 lemon
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
Salt and pepper, to taste
1. In a food processor, combine avocado, yogurt, lemon, garlic, parsley, salt, and pepper. Puree the mixture until smooth.

2. Taste for seasoning, and add more salt and pepper, if you like.
