Serves 8
| 3 | slices bacon, finely chopped |
| 2 | bags (16 ounces each) frozen peas |
| 2 | tablespoons sugar |
| 3 | tablespoons chopped fresh mint |
| Salt and pepper, to taste |
1. In a large skillet over medium heat, render the bacon until crisp. Transfer it to a plate lined with paper towels. Discard all but 1 tablespoon fat from the pan.
2. Tip the peas into a colander and rinse them with cold water to separate them. Add peas and sugar to the skillet. Cook, stirring often, for 5 minutes or until the sugar starts to thicken into a glaze.
3. Stir in bacon, mint, salt, and pepper.
