|4||large sweet potatoes, cut into slender spears|
|2||tablespoons olive oil, or more to taste|
|Salt and pepper, to taste|
1. Set the oven at 400 degrees. Have on hand 2 large rimmed baking sheets.
2. On the sheets, spread out the potatoes. Sprinkle each batch with 1 tablespoon of the oil. Toss the spears with your hands until they are coated all over, adding more oil if necessary. Arrange the spears cut sides up in a single layer. Sprinkle with salt and pepper.
3. Roast the spears, turning several times with a wide metal spatula, for 40 minutes or until they are brown at the edges. Sprinkle with more salt, if you like.
