|4||carrots, cut into matchsticks|
|4||celery stalks, cut into matchsticks|
|1||English cucumber, thinly sliced on the diagonal|
|1||bunch fresh radishes, ends trimmed, radishes halved or quartered|
|2||Belgian endives, leaves separated|
|1/2||pound fresh sugar snap peas, stem ends trimmed|
|Juice of 1 lemon|
|Sea salt, to taste|
1. On a large platter, arrange the carrots, celery, cucumber, radishes, endive, and sugar snaps, setting each color in several places.
2. Sprinkle with lemon juice and sea salt.
