Serves 8

4 carrots, cut into matchsticks
4 celery stalks, cut into matchsticks
1 English cucumber, thinly sliced on the diagonal
1 bunch fresh radishes, ends trimmed, radishes halved or quartered
2 Belgian endives, leaves separated
1/2 pound fresh sugar snap peas, stem ends trimmed
Juice of 1 lemon
Sea salt, to taste

1. On a large platter, arrange the carrots, celery, cucumber, radishes, endive, and sugar snaps, setting each color in several places.

2. Sprinkle with lemon juice and sea salt.
