Sunday supper and more
(For roast salmon, salmon cakes)
1 piece (3 pounds) boneless salmon, cut from the thickest end
1 egg
2 pints cherry tomatoes
1 small lettuce or 1 quart mesclun lettuces
1 bunch fresh dill
1 lemon
Salt and pepper, to taste
1/8 teaspoon cayenne pepper
1/2 cup olive oil
3 tablespoons vegetable oil
1/4 cup chopped roasted red pepper (from a jar or can)
3/4 cup mayonnaise
1/2 sleeve saltine crackers
3 tablespoons bottled cocktail sauce
