Hand-painted porcelain egg coddlers are intriguing, but not nearly as exciting as opening them up. It’s like unwrapping a delicious little present, in which a soft yolk and tender white are nestled in a cup. Coddled eggs make a perfect brunch or even dinner item. There are few rules. Add prosciutto or smoked fish, sauteed greens or mushrooms, or your favorite cheese. Butter the little molds, add the garnishes and an egg to each one, and put them in the oven. Ideal for one or 10.
