A reader sends us oven fish chowder
Jan Quiram of Jamaica Plain sent in this intriguing recipe for cooking fish chowder in the oven. We love applying new techniques to familiar recipes, so we just had to try it.
Quiram writes, “We joined a food co-op when we first moved to Jamaica Plain almost 40 years ago. I was a Midwestern transplant and enjoyed lake fish all my life, so this was my first foray into the wide variety of ocean fish available in Boston. This recipe showed up in our food box one week (probably when potatoes came into season), so it is anonymous. It is super easy because everything, except the milk, goes in the oven together without any prep other than chopping.
Now it is one of my signature dishes and a family favorite.’’
