2 medium flank steaks (3 pounds total)
3 yellow bell peppers
2 bunches scallions
1 head Boston lettuce
4 cups baby spinach
3 medium carrots
1 English cucumber
1 small red onion
1 pint cherry tomatoes
1/2 bunch fresh cilantro
1/2 bunch fresh mint
2 to 3 Thai chilies or 1 to 2 jalapenos
2 cloves garlic
3 limes
1 piece (4 inches) fresh ginger
Salt and pepper, to taste
2 tablespoons peanut oil
3 tablespoons toasted sesame oil
1 tablespoon rice vinegar
1 teaspoon sriracha or other hot chili-garlic sauce
1/4 cup honey
1/4 cup soy sauce
2 tablespoons rice wine vinegar
3 tablespoons light brown sugar
