Serves 4

2  cups chopped cooked potatoes 

1  cup chopped cooked onions 

4  cups chopped cooked turkey 

1/2  cup turkey gravy, or more if necessary 

2  tablespoons butter 

2  sprigs fresh sage, leaves removed from stems 

4  eggs 

 Salt and pepper, to taste 

1. On a cutting board, mash together the potatoes, onions, and turkey. Add the gravy to the mixture to bind it. Press the mixture into one patty.

2. In a large nonstick skillet over high heat, melt the butter and add the sage leaves. Let the butter brown. Add the turkey patty. Cook 4 minutes or until it is golden brown on the underside. Turn and brown the other side for 4 minutes.

3. In another nonstick skillet, fry the eggs, 2 at a time, until they are just done. Divide the patty into 4 pieces. Add a piece to each of 4 plates. Add a fried egg and sprinkle with salt and pepper.
