Pomegranate and Meyer lemon granita

Serves 4
Granita is a simple homemade ice. Combine all of the ingredients and place them in a stainless roasting pan in the freezer. Scrape the pan regularly to create snowy ice crystals during the freezing process.
1/4 cup water
1/4 cup sugar
1 1/2 cups pomegranate juice
Grated rind and juice of 2 Meyer lemons, plus additional rind for garnish
1 extra Meyer lemon (for garnish)
1. In a small saucepan, bring the water and sugar to a boil. Stir to dissolve sugar.
2. In a small stainless steel roasting pan, stir together pomegranate juice, lemon rind and juice, and the sugar-water mixture. Transfer to the freezer, setting it in a spot where the pan is secure.
3. Freeze juice for 1 hour. Remove from freezer, and scrape with a fork. Return pan to the freezer. Scrape every 30 minutes for 2 hours more, returning the pan to the freezer after scraping. Continue to freeze overnight.
4. With a fork, fluff granita before serving. With a rotary vegetable peeler, remove 4 strips from the extra Meyer lemon. Cut the strips into fine matchsticks. Spoon the granita into 4 glasses and sprinkle with lemon rind.![]()
