Makes 1 cup

Turbinado is raw sugar with coarse, blond-colored crystals and a light, molasses flavor. It is essential in this rub because it doesn’t burn as easily as granulated or brown sugar. A mixture of white, black, pink, and green peppercorns add complex flavors.

cup turbinado sugar
¼cup kosher salt
3tablespoons Spanish paprika
2tablespoons chili powder
¾teaspoon cumin seeds, freshly ground
teaspoons mixed peppercorns, freshly ground
teaspoons garlic granules
1teaspoon onion granules
½teaspoon chipotle powder

1. In a spice blender or regular blender, combine the sugar, salt, paprika, chili powder, cumin, peppercorns, garlic and onion granules, and chipotle powder.

2. Pulse to form a fine powder. Refrigerate in an airtight container. Adapted from “Wicked Good Barbecue”
