Sorry all you watermelon and feta salads of the world, you've been replaced. It was a solid run, but I can't say I'm bent out of shape over it. Heirloom tomato, mozzarella and watermelon is all the rage these days, so naturally I'm trying to eat as much of it as possible before tomatoes go out of season until next summer. And I recommend you do the same, because when these three ingredients are served together with some basil and balsamic it creates the equivalent of a Beethoven symphony on your plate. And then in your mouth.

This is a salad that Jacki and I made the other day. It's easy, cheap, healthy and pretty. Everything we like for a weekday dinner. Don't feel like cooking? I've seen it (or a similar version) make an appearance on the menus or specials at Coppa, Eastern Standard, Cafeteria, Upstairs on the Square, Central Kitchen and The Salty Pig. Happy tomato season!
