Land & Sea, $23
The dish, made of hedgehog, yellow oyster, and lobster mushrooms layered with two seaweeds and house-made "ricotta cheese" – actually cultured almonds – is certainly the best thing on the menu. A small salad of microgreens, pea shoots, and enoki mushrooms is dressed with lemon-truffle vinaigrette.
