Serves 6

This mixture of starchy mashed potatoes and scallions is an Irish classic.

4 Idaho or russet potatoes, cut into pieces

2 cups milk

1/4 cup ( 1/2 stick) butter

6 scallions, finely chopped

Salt and pepper, to taste

In a large saucepan, cover the potatoes with several inches of cold water. Bring to a boil, lower the heat, and cook the potatoes for 15 minutes or until tender.

Drain them and set aside.

In the same saucepan, heat the milk to boiling. Add the butter and let it melt. Add the scallions and turn off the heat.

In a bowl, mash the potatoes with a potato masher. Add the hot milk mixture a little at a time. Season with salt and pepper and serve at once. Sheryl Julian
