Sam Katz-Christy, a robot-builder by day, was tired of all the plastic yogurt containers he was throwing out. He decided to eliminate the waste by making his own yogurt using milk that comes in glass bottles and using glass mason jars for storage.
"One evening making yogurt in my kitchen, I thought there are probably twenty other people in the city also making yogurt once a week in their kitchens, and if we all worked together we could be a lot more efficient and have a lot more fun," explained Katz-Christy. And with that idea, the Davis Square Yogurt-Making Coop was born.
The group, begun last year, now has about a dozen members and new members are added on a rolling basis. Each member pays a fee for supplies and makes yogurt about once every six weeks, but they get to pick up a quart of fresh yogurt weekly for 24 weeks. The co-op uses a local church?s kitchen and works with the team at Parts + Crafts to streamline the process.
Not only is the yogurt waste-free, but Katz-Christy swears it is delicious. Katz-Christy says it is thick and tart and also makes a great Berryline-style frozen yogurt. Nutritionally, the yogurt only contains milk and bacteria; it does not have any of the additives that many commercial yogurts contain.
The group's success has made them think beyond making yogurt for themselves. They are considering holding open houses so non-members can learn to make yogurt (an idea I hope they follow through with!). They are also thinking of expanding the co-op to include other products, like granola or bread.
