When the Metropolitan Opera Broadcasts opens its 75th season tomorrow, it will do so with something approaching stability. Although the ''Save the Met Broadcasts" fund-raising campaign continues, the historic radio series has found a corporate sponsor to back both this year's and next year's series of December-through-May programs, which are heard locally on WHRB-FM (95.3).
