Lemond fixed-gear conversion. The rider went most of the way, switching to a real fixed-gear rear hub and removing the derailleurs and cables, but stayed with the original Shimano levers -- including integrated shifters -- in place. Full fenders and cantilever brakes will make this a nice winter rider.
