All the prep work for the annual holiday parties, from appetizers to entrees and side dishes, can feel overwhelming. Southborough’s Culinary Underground, which bills itself as “a school for home cooks,” offers classes that are designed to provide a night out with friends and a break from holiday stress.

There are spaces available in the Holiday Appetizer Workshop, being held Wednesday from 6:30 to 9 p.m. at the school, 21 Turnpike Road (Route 9 west).

The class features a new menu this year, including caramelized plantain and chorizo empanadas, Finnish chicken meatballs with lingonberry jam, and bento balls with smoked salmon.

There will be discussion about preparation techniques to help holiday events run smoothly, including items that can be made ahead of time.
