AMHERST, Mass.—UMass is celebrating the start of the new academic year with an attempt to make the world's largest sushi roll.
Three-hundred volunteers along with celebrity chefs will try to build the 400-foot sushi roll on Labor Day using 650 sheets of nori seaweed, 200 pounds of rice, 200 pounds of surimi -- imitation seafood available as crab, lobster and other shellfish -- 100 pounds of avocado, 100 pounds of cucumber, two pounds of sesame seeds, five gallons of soy sauce and six pounds of wasabi.
Food Network chef Jet Tila and Hiroko Shimbo, a cookbook author and authority on Japanese cuisine, will help.
The roll will be constructed at the annual welcome barbecue for new students, staff and guests.
The current record is 330 feet, set last November at Cal-Berkely.
