BBQ Pulled Pork Roll-ups Boston.com

Ingredients:
  • 2 lb. Hormel Pulled Pork
  • 1/2 Bunch scallions, chopped
  • 2 Tbsp. Fresh cilantro, chopped
  • 5 oz BBQ sauce
  • 3 oz Red hot sauce
  • 1 Spanish Onion
  • 2 Tbsp. Vegetable oil
  • 1 1/2 Cups shredded cheddar cheese
  • 4 White tortilla wraps, warmed
Directions:
Tear pork into strands, and combine with scallions, cilantro, BBQ sauce, and red hot. Simmer over medium heat for about 10 minutes. Meanwhile, cook onion in vegetable oil over low-med heat until very soft and tender. Add the onions to the pork mixture. Spread this mixture over the bottom half of each warmed tortilla. Sprinkle cheddar cheese over the pork mixture. Starting with the bottom of the tortilla, roll up slowly. Slice if desired and enjoy.
