Crusted Pork Roast with Horseradish Sauce

3-4 lbs boneless pork loin roast
1 1/2 cups fresh bread crumbs
3/4 cup mayonnaise
3/4 cup dijon mustard
3 T prepared horseradish
1 T olive oil
salt & pepper
Preheat oven to 425 F
Sauce: mix mayonnaise, mustard and 2 T of horseradish. Set aside.
Season roast with salt & pepper to taste. In large skillet, heat olive oil and sear pork roast on all sides until nicely browned. Remove from skillet and let cool for about 10 minutes. Mix breadcrumbs with 1 T horseradish. Place mixture into same skillet and lightly toast over medium heat stirring constantly. This will only take a minute or so.
Brush a liberal amount of the sauce over the entire roast. Press the breadcrumb mixture on to the roast leaving the bottom plain. Roast loosely covered with foil at 425F until meat thermometer reads 145F. Let rest covered for 15 minutes. Serve with remaining sauce.
