In the mix:
2 oz. pureed rhubarb syrup
3 oz. Ketel One vodka
A squeeze of lime
Shaken and strained into a martini glass garnished with real huckleberries.

"Rhubarb normally has a pretty bitter taste to it, but this syrup brings out the sweetness," says bartender Zack Grenier.

Also from the bar: Cucumber Gin Blossom, a chambord-sweetened blend of rose petal and cucumber infused gin.

Bottom line: Luscious and tart, this drink is fruity but not overwhelming.
